What do you get when you combine chocolate cookies and nuts with a caramel cheesecake? A fun twist to the turtle candies that everyone makes at the holidays, that’s what! I loaded these cheesecake cookie bars with plenty of that gooey turtle goodness. I dare you to eat only one!

INGREDIENTS

For the Cookies

½ cup (1 stick) unsalted butter, at room temperature

½ cup vegetable shortening

½ cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon cornstarch

½ teaspoon baking soda

½ teaspoon salt

2½ cups all-purpose flour

½ cup unsweetened dark cocoa powder

For the Cheesecake

1 (8-ounce) package cream cheese, at room temperature

½ cup packed brown sugar

¼ cup Caramel Topping

2 tablespoons all-purpose flour

1 large egg

For the Topping

1 cup dark chocolate chips

¾ cup heavy cream

18 caramel candies, unwrapped

¼ cup finely chopped pecans
